Dawukou Liangpi: A culinary legacy from Ningxia

In Ningxia's Shizuishan city, Dawukou Liangpi has become a celebrated local delicacy and boosted the local food industry.
Made with locally sourced, high-quality flour, spring water from the Helan Mountains, and thin-skinned chili peppers, Dawukou Liangpi is celebrated for its balanced tangy and spicy taste. This cold noodle dish blends traditional recipes from settlers across China with local northern ingredients.
The dish has grown into a thriving local industry over the past 50 years. Dawukou district boasts 260 liangpi businesses, producing up to 30,000 servings daily. With 12,000 servings delivered across and beyond Ningxia each day, the industry generates an annual revenue of 150 million yuan ($20.6 million), according to data from local authorities.
